The Vision Behind Polo Grill: Founder Robert Merrifield
In 1983, founder Robert Merrifield envisioned a new culinary benchmark for Tulsa, OK—a restaurant dedicated to delivering the finest cuisine, impeccable service, and unmatched hospitality. That vision became Polo Grill.
What began as a modest bar and single dining room in Utica Square has thoughtfully grown alongside the city of Tulsa over four decades. Driven by a passion for excellence and guest accommodation, Robert’s commitment to evolving the dining experience has transformed Polo Grill into Oklahoma’s premier fine dining establishment.
Four Decades of Milestone Growth
1983 — The Beginning: Polo Grill opens its doors in Utica Square with a single dining room and bar, establishing a new standard for Tulsa fine dining.
1996 — First Major Expansion: Added 1,260 square feet to create our dedicated wine cellar and private dining combination, expanding the wine collection to 4,250 bottles.
1998 — Cellar & Private Tasting Rooms: Expanded wine storage to over 10,000 bottles with over 1,000 selections, establishing one of the premier wine programs in the region.
2020 — The Polo Lounge: Introduced the Polo Lounge, featuring a second granite-topped bar, plush booth seating, and dedicated indoor space for live music.
Polo Grill Today: Proudly housing 25,050 bottles across 1,478 vintages, five elegant private dining rooms, a vibrant patio service, a full-service catering operation, and Oklahoma’s finest wine program—all led by an award-winning hospitality team.
